*Eton Mess

This is a truly scrumptious pudding….

500g Strawberries, washed and halfed
300g Raspberries
500ml Double cream
4 tblsp Icing Sugar
x4 small meringue nests from a packet, or homemade if you’re feeling super efficient!!

Start by making the raspberry coulis, blitz the raspberries (reserving just a small
handful for the end) with 2 tblsp of the icing sugar in a blender and set aside.

Whip the cream with the remaining icing sugar until soft peak stage, at this point
you can fold in the crumbled meringue nests, carefully does it, it’s nice to have big
chunks aswell as sugary dust throughtout!

Gently fold in the strwberries followed by most of the coulis, you’ll get this lovely
rippled effect.

Transfer to a serving dish, (I like to use a tall glass bowl so you can see all the layers)
top with the remaining fruit and a final drizzling of the coulis…….

Take to the table with enough spoons for your guests…… unless dining alone….. And
enjoy!!!!

Feel free to change or add fruit, this is equally delicious with Blueberries folded
through or take away the berries and use passionfruit!
